Ice Cream Rolls
If you want to serve a very unique dessert at your next event, make an ice cream roll. Sometimes known as an ice cream cake roll, this dessert is unlike any other. It combines cake and ice cream to make a delicious dessert with an original look. An ice cream roll not only looks great, it makes serving easy. Instead of struggling with cutting a cake into triangles and carefully lifting slices onto a plate, you can easily cut pieces off the ice cream roll. Cut a slice off the roll and then place it right onto a plate. If you want to have an ice cream roll for your next party, here is a great recipe to make one:
¼ cup cake flour
¼ cup cocoa powder
¾ cup granulated sugar
4 eggs, separated
½ teaspoon cream of tartar
vanilla (or flavor of choice) ice cream
10 x 15 jelly roll pan
1) Preheat oven to 400 degrees and grease or spray the jelly roll pan. (you can use vegetable pan spray). Sprinkle a good amount of cocoa onto the pan. Mix together ¼ cup of cocoa with flour. Add granulated sugar and mix again.
2) In a large bowl, beat egg yolks with a mixer until they are light and fluffy. In a separate bowl, mix egg whites with salt. Use an electric mixer to beat the egg whites until they foam. Then you can add cream of tartar and vanilla extract and continue to mix until the whites are stiff but moist. Fold one-third white mixture into yolk mixture until blended, and spoon the yolks over the whites. Spoon flour mix over egg yolks and gently fold them together until there are no streaks of egg white or flour. Spread the product into prepared pan. Place the pan in the oven for 10-12 minutes. Once you can place a toothpick into the center and it comes out clean, the cake is done.
3) Remove the cake from the oven and immediately place onto a clean kitchen towel. Trim away any crisp edges around the outside. Roll the cake up in the towel from the long side and let it rest for one minute. Next, unroll it and let rest for 5 minutes. Re-roll the cake in the towel again and let it cool completely.
4) Unroll the cooled cake and spread the ice cream over it. Once you have applied enough ice cream throughout the cake, you can roll the cake up again. Place the roll into the freezer for several hours until it is firm. Before serving, sprinkle the confectioner's sugar over the ice cream roll, and then cut and enjoy!
